Salsa Chicken & Rice

I came up with this recipe after hunting down other recipes for Salsa Chicken.

Ingredients

1lb of chicken tenders (approximately 10 tenders)
2 jars of your favorite salsa
1 can of either pinto beans or black beans
1 cup chicken broth
1 tsp chili powder
1 tsp cumin
1/2 cup taco sauce
1 cup of uncooked rice
2 cups of mexican cheese blend

Directions
Preheat oven to 375 and grease a 9 x 13 pan.

In a bowl combine rice, salsa, sauce, broth, chili powder, and cumin

Pour into the pan and add beans and chicken tenders.

Cover with foil and cook for 1 hour (longer if you use unthawed tenders)

If the rice is done add cheese and continue to bake until cheese has melted.

I found that with frozen tenders this recipe took about 1 hour and 15 minutes.

New Music

I was reliving my school days this week, because of the weather. I had a few delays because my office is out in the boondocks and the road to get there is seldom clear. So I watched a lot of talk shows.

I would like to thank GMA and Jimmy Fallon for introducing me to Imagine Dragons (as you saw in my hump day hunks post) and Walk The Moon.

Its really been a long time since I had music that I was really getting excited about. Walk The Moon takes me back to the 80s. Their current single "Shut Up And Dance" reminds me of 80s new wave.

And while I'm sharing videos. Did any of you see Miley Cyrus on the SNL 40th special?

I don't usually have much to say about her, but she covered "50 Ways To Leave Your Lover" and it was impressive. Honest, when she isn't trying to shock people by being ridiculous, she has a pretty strong voice, especially for folk and country songs. I'd love to see her do a country album.


If she did an album like this, I'd buy it in a heartbeat.

Paul McCartney was on the same special, and sadly RETIREMENT was the only word I could think of as he butchered "Maybe I'm Amazed."

I love him to pieces, but his voice is not there anymore.

I Learned Something New Today

I had a bit of a history lesson watching Good Eats today.


Let's have some pity for Boston, m'kay.


Not only have they got the worst of it this winter, being dumped on with feet of snow each weekend for the last few weeks, but let's go back in history to learn something new and horrible that happened there.


On January 15, 1919 the Boston Molasses Disaster occurred.


A large molasses storage tank burst, sending molasses flowing through the streets at a rate of 35 mph, killing 21 and injuring 150.


Yikes!


Bet you know where that old saying about molasses comes from now!


This occurred in Boston's north end, and on hot summer days, some people say they can still smell the molasses!

House Hunting Is Hard Work

I'm trying to find a new house.


The problem is, I have a limited budget and more than a few requirements for the house.


Oddly, a low price isn't the problem in the pitiful hamlet in which I reside.


What is a problem is finding a house that I can get my mom in and out of with relative ease. The half bath/powder room is another tricky thing. It isn't a necessity, but it sure would be nice, since mom stays downstairs.


There's on 8th St that looks darn near perfect, except for where it sits on the hill. That makes it bad for parking and driving in snow, and we all know what PA winters are like.


Can you say snow and freaking cold. It's going to be below zero tonight.


I don't know if I can take another winter like this.


It almost, and I do only mean almost, wish I lived further south. That's saying a lot, but since I don't want to do that, I'll take a warm house. ASAP

Dear Anti Vaccers

I think it is time to address the idiots who won't vaccinate their children. I don't mean the parents that can't because their child has a compromised immune system either.

I admire your lack of caring for the rest of the planet. It takes a truly selfish person to put other children at risk because of your beliefs.

Now I do believe that you have a right as a parent not to vaccinate your children, but I think if that is your choice, your child should have to be home schooled, and while your at it, your kid shouldn't be able to take part i group activities too.

I can't believe the idiocy of people, especially when they start...well the vaccines cause autism.

THEY DO NOT.

Yes, there has been more autism in recent years, but it isn't the vaccines. I'm sorry. And really, you'd rather have your child get a disease that could kill them over autism?

The mind boggles.

But still I won't tramp on your freedom to be stupid, which we unfortunately allow in this country, but for the love of God, try to think outside your own little bubble sometimes.

The world doesn't need a huge measles comeback, and unfortunately we are getting one.
